In a pan, melt a tablespoon of ghee and add the onion, stirring until it turns golden. Then, add the garlic and stir again. Now, take the minced meat and add it to the pan, stirring until it changes color. After that, add black pepper, salt, and spices, and give them a good stir for about 10 minutes.
Now, heat up the soup on medium heat. We don’t want it to reach boiling point because the roqaq won’t tolerate it. Soak the pastry in the soup and layer each sheet in a greased tray, brushing it with cream or butter between each layer. Don’t forget this step so that the roqaq becomes crispy and flaky.
After 5 layers, add the meat, and then continue with the rest of the roqaq sheets. When you finish, cut the roqaq into squares or triangles as you prefer. Brush the top with ghee and bake in a preheated oven at medium heat for 20 minutes. Serve the tray hot to your loved ones, and they’ll be grateful to you.
