In a large pot, start by preparing the marinade. Mix the chopped onions, crushed garlic, ground ginger, turmeric, ground black pepper, cinnamon, olive oil, lemon juice, and half of the chopped parsley. Season the mixture well with salt and mix it all together thoroughly.
Now, place the chicken pieces in the pot and evenly distribute the marinade over them, ensuring that the chicken is completely coated with the spices. Let it marinate for at least 30 minutes, or you can refrigerate it for an hour or longer. The longer it marinates, the more flavorful it will be.
Take the pot out of the refrigerator and place it as it is on low heat for 30 minutes. While it’s cooking, preheat the oven to 180°. Once the chicken is cooked through, remove it from the heat and brush it entirely with butter. Transfer it to a baking dish and add the remaining pickled olives. Place it in the oven until you see it turn golden and slightly charred.
Serve the delicious Moroccan roasted chicken dish hot, and pour the remaining marinade over it as a tasty sauce. Garnish with lemon slices, parsley, and pickled olives on top, and savor the incredible flavors!
