3 eggplants, half peeled & cut into cubes5 tablespoons oil

No one who doesn’t love eggplant! Now we’re going to make a delicious dish that you can eat at any time, and it only takes about 15 minutes to prepare. Before anything else, soak the eggplant in water and salt to remove the bitterness.
Take a wide frying pan and heat the oil in it. Add the onion and green pepper, and when you smell the sweet aroma of the pepper that we all know, add the garlic until it turns golden.
Next, add the drained eggplant to the frying pan and stir all the ingredients together. Add salt, black pepper, and basil, and give it another stir until the eggplant slightly wilts.
Now add the tomatoes, tomato sauce, and a small spoonful of oil. After that, add a small teaspoon of paprika and give it a quick stir. Finally, add a quarter cup of water, cover the pan, and let it cook for 10 minutes until the eggplant is tender.
Then, take a Pyrex dish or casserole and spread the mixture in it. Sprinkle mozzarella cheese or any available cheese on top. Place it in a preheated oven at 200 degrees Celsius for about 20 minutes. Lastly, don’t forget to garnish the dish with parsley.
