Let’s start by washing the rice thoroughly and soaking it in water for 30 minutes. Then, heat oil in a large pot over medium heat and add the chopped onions. Stir them until they turn golden. Once you notice the color change, add the minced garlic and stir for a minute. Can you smell the garlic and onions? Immediately, add the chopped tomatoes and cook them until they soften.
Now it’s time for the carrots and potatoes to join the mixture. Keep stirring all the ingredients for 5 minutes. Then, add the green and red bell peppers and stir for another 2 minutes. Next, add the green peas and stir for a minute. If you want to add raisins, feel free to do so.
After the previous stirring, it’s time to add the spices (biryani spices, turmeric, cinnamon, paprika) and salt. Stir well to ensure the ingredients are mixed with the spices.
Drain the rice from the water and add it to the pot with the ingredients. Mix everything very well. Once you find that the rice is fully mixed with the ingredients, add 4 cups of hot water and chicken broth. Give it a gentle stir, then increase the heat until the water boils. Reduce the heat, cover the pot, and let it cook for 15-20 minutes or until the rice absorbs all the water.
You can now beautifully serve the Biryani rice by garnishing it with roasted nuts and chopped parsley. It will be delicious and enjoyable!
You can also add minced meat or chicken to the Biryani if you want to make a protein-rich dish. Just fry the meat or chicken with onions and garlic before adding the vegetables. It won’t take much time!
